In Summer season the most awaited fruit is Mango for all of us . Here is an my Grandmas recipe for making Amer Mishti Achar from raw mango using jaggery and spices .....

Ingredients Serving: 6

  1. Raw mango - 500 gm cut into long pieces
  2. Jaggery - 350 gm
  3. Panchforon - 2 tablespoons ( Bengali panchforon is mix of five whole spices . It consists of methi , jeera , kalonji , saunf and mustard )
  4. Mustard oil - 1 tablespoons
  5. Turmeric powder - 1/2 teaspoon
  6. Salt - 1 teaspoon
  7. Whole red chilli - 8 no

Instructions

  1. HEAT 1 TABLESPOONS MUSTARD OIL AND ADD 1 TABLESPOONS PANCHFORON AND 4 WHOLE RED CHILLI
  2. ADD THE SLICED MANGO PIECES AND STIR FRY
  3. FRY IT FOR 2 MINUTES
  4. ADD 1 TEASPOON OF SALT AND 1/2 TEASPOON OF TURMERIC POWDER AND MIX WELL
  5. POUR IT ON A PLATE
  6. ADD 1 CUP OF JAGGERY AND 1/2 CUP OF WATER BRING IT TO BOIL
  7. 2 TABLESPOONS PANCHFORON AND 4 NO WHOLE RED CHILLI DRY ROASTED IN A PAN
  8. STIR THE JAGGERY CONTINUOUSLY DON'T LET THE JAGGERY CARAMELIZED
  9. STIR CONSTANTLY ADD ADD FRIED MANGOES
  10. COOK FOR 5 MINUTES
  11. ADD DRY ROASTED PANCHFORON POWDER
  12. MIX WELL AND SWITCH OFF THE FLAME
