ABOUT 3 Spice Potato Stir Fry (Sukhi Aloo Sabzi) RECIPE

On Mother's Day I cooked a lunch for my Mom and Granny, 3 Spice Potato Stir Fry was one of them for the Mother's Day Treat. My Grandpa had a special love of "Bataka"(Aloo in Gujarati) and on dialy basis wanted to savor Potato in his "Thali" or "Tiffin". My Granny used to make various version of "Aloo" and this recipe was Grandpa's favorite. My Granny is the inventor of this Simple "3 Spice Aloo Sabzi" recipe but the slow pan roasting of Potatoes in Iron Kadhai is hard to crack if unaware of the Technique.

Ingredients Serving: 2

  1. Boiled, Peeled and diced potatoes 4
  2. Asafoetida a pinch
  3. Turmeric 1/2 tsp
  4. Red Chilli Powder (ReshamPatti Red Chilli Powder) 1/2 tsp
  5. oil 1 tbsp
  6. salt as per taste
  7. Corainder for Garnish

Instructions

  1. Warm up oil in IRON Kadhai.
  2. Add Asafoetida (Add salt if u see vapours in your Kadhai to lower the oil temperature).
  3. Add Turmeric, Chilli Powder and Salt.
  4. Add Potatoes and blend so that they have a nice coat of 3 Spices.
  5. Turn your flame to slow and keep on stirring the potatoes.
  6. Once you find a nice crisp coat over potatoes, turn off the flame.
  7. Finish off with Coriander Garnish and serve them with hot Phulkas/Chapati.
