Ingredients Serving: 4

  1. For the Aloo Sabzi - Potato - 6 boiled
  2. Onions - 3 sliced
  3. Tomato - 2 cut similarly
  4. Ginger - half inch piece finely chopped
  5. Green chilly - 2 to 3 cut small
  6. Garlic - 2 pods finely chopped
  7. Mustard seeds - 1tspn
  8. Split urad dal - half tspn
  9. Turmeric pwdr - half tspn
  10. Red chilly powder - little
  11. Salt to taste
  12. Oil - 2 tbspn
  13. Curry Leaves - 1 sprig
  14. Coriander leaves for garnish
  15. water for cooking
  16. For the puris -
  17. 2 cups atta
  18. Little oil while kneading
  19. Salt to taste
  20. Water as required
  21. Oil for Deep frying

Instructions

  1. Take a pressure cooker and boil the potatoes. When they are cooked, cool it & peel them . Later mash the potatoes and keep aside
  2. Now in a kadai put oil & when hot put mustard seeds & split urad dal.
  3. Let it splutter. After that add the sliced onions, curry leaves, green chilly ,ginger & garlic
  4. Saute well for a few minutes till the raw smell goes
  5. Then add salt, turmeric powder & chilly powder. Add the chopped tomatoes
  6. Mix well till they are soft
  7. Now add the boiled & mashed potatoes.
  8. Pour little water & bring to boil. cook to the desired consistency
  9. Check salt and if required add according to taste.
  10. Turn off the gas when done & garnish with Coriander leaves
  11. Serve hot with puris
  12. For the puris- Take a vessel put the atta, salt & little oil and knead into soft dough. There should not be much water in the dough. Let it rest for half an hour.
  13. Now put oil for deep frying in a kadai & heat it.
  14. In the meantime make puris by making small balls & rolling out them to small circles
  15. Here I have used a heart shaped lid to make puris.
  16. Put them in the kadai when hot & fry them well till fluffy.
  17. Serve hot with Aloo Sabzi
