ABOUT Coconut Buns with a twist ( DilKush) RECIPE

Most of us could reminisce enjoying these coconut buns as a child . Nayar Bakery , Iyengar Bakery has their own tastes . Some called it Coconut buns , some coconut balls while others named it Dilkush/ Dilpasand . I always call it coconut balls . These are my favourites . Never I cared to know about the ingredients as I was engrossed with its taste . Only after becoming a mother , I intended to know about the ingredients . Sadly . Bakery buns include refined flours and loads of sugar . I want my daughter to enjoy these beauties as I did but let her consume the healthier ones . That’s how I made a twist and trust me guys . These buns taste yum and 200 % healthier compared to the actual bakery ones . I have made this bun with whole wheat flour . Have replaced sugar with jaggery . Haven’t included tutti fruitti as I don’t prefer them because it carries artificial food colours . Here it is . Healthy Homemade Eggless Coconut buns .

Ingredients Serving: 7

  1. For the buns :
  2. Whole Wheat Flour 1 cup
  3. Salt 1/4 teaspoon
  4. Dry yeast 1 to 1.5 tablespoon ( check packet instruction)
  5. Powdered palm sugar 3/4 teaspoon
  6. Warm milk 1/2 cup
  7. For the Filling :
  8. Shredded fresh coconut 1 cup
  9. Powdered jaggery 3/4 cup or add extra if preferred
  10. Water 3 -4 tablespoons
  11. Golden raisins 10
  12. Sweet green grapes finely chopped 3 tablespoons
  13. Pomegranate 3 tablespoons
  14. Cardamom powder 1/2 teaspoon
  15. Other Ingredients :
  16. Ghee for greasing palms
  17. Butter for brushing the buns .
  18. White sesame seeds for garnishing

Instructions

  1. In a small bowl , take little warm milk . Add the yeast . Mix and leave it for 5 to 7 minutes .
  2. In a wide bowl , take sieved whole wheat flour , salt , sweetener . Mix all with finger tips .
  3. Now add the yeast milk mixture .
  4. Knead the dough by adding warm milk gradually . Use required milk . Knead to a soft dough .
  5. Keep the dough covered in a warm place for 2 hours for the yeast to activate , in turn to ferment the dough .
  6. After 2 hours , the dough looks doubled in size .
  7. Keep it covered .
  8. Lets prepare the filling .
  9. In a pan , take powdered jaggery . Add little water to firm a thick syrup .
  10. Keep stirring in low heat until jaggery dissolves completely and boils for couple of minutes .
  11. Filter the jaggery to discard impurities at this stage .
  12. Add the filtered clean jaggery syrup to a pan .
  13. In low heat , add the shredded fresh coconut .
  14. Sauté for 2 minutes till coconut mixes well in jaggery .
  15. Add golden raisins , chopped grapes and pomegranate , cardamom powder .
  16. Mix all together gently without mashing anything .
  17. By now the content looks dry and not sticky .
  18. Cool the filling .
  19. Divide the dough into equal medium portions .
  20. Take a portion of the dough and press it flat within your ghee greased palms .
  21. Place a tablespoon or required coconut fruits filling in the centre of the flattened dough .
  22. Now seal the ball ( dough ) carefully without any cracks .
  23. Make it a smooth ball .
  24. Spread a baking sheet on a baking tray .
  25. Place the filled ball on the baking sheet .
  26. Similarly repeat the steps to prepare remaining buns .
  27. Finally brush them with melted butter and sprinkle white sesame seeds on the buns .
  28. Bake the buns in a preheated cooker for 20 to 30 minutes in low to medium heat . Preheating time is 10 minutes .
  29. After 20 minutes , brush the buns again with butter . Cover and bake till done .
  30. Once baked , take the tray out .
  31. Bring the buns to warm .
  32. Delicious Coconut buns are ready to serve . Serve warm.
