ABOUT Vegetable Hakka Noodles RECIPE

I love making this as it is really simple to make and is loaded with veggies.

Ingredients Serving: 2

  1. Hakka Noodles/Egg Noodles – 2 Blocks (Inside the packet you’ll have noodles in blocks take 2-3 as per your taste)
  2. Carrot – 3 Medium
  3. Green and Red Bell Pepper/Capsicum – 1 Medium
  4. Onion – 1 medium
  5. Cabbage – 1/2 Medium (Cabbage is the main taste maker so add more of it if you like)
  6. Pepper – As per taste
  7. Ginger – 1/2 inch
  8. Olive oil – 2 Tbspoon
  9. Eggs – 3
  10. Salt – to taste


  1. Boil water along with salt just required for noodles(enough for the noodles to immerse) then add the noodles with 1/4 tsp oil. Cook noodles until it’s 3/4th cooked. Drain water and wash it to remove the excess starch, set aside
  2. Cut all the veggies thin,length wise and keep aside.
  3. In a Wok/Vessel add little oil, once the oil gets heated add the beaten eggs, required salt and pepper for eggs and make a scrambles eggs/bhurji and keep aside
  4. In the same Wok or pan add the rest of the oil and keep high flame.
  5. Once the oil gets heated up add ginger and onions. Saute for a min.
  6. Add Carrot and saute for 2 mins until the carrot is cooked little. (Do not cook too much the carrot should be crunchy)
  7. Add Capsicum and Cabbage. Add Salt,Pepper and mix well for a min.
  8. Add Noodles in the end and toss well. Adjust the salt and pepper as per the taste.
  9. Add the scrambled eggs in the end and toss well until everything is mixed well.
  10. Serve Hot
