Ingredients Serving: 4

  1. Basmati rice 1 cup
  2. Methi leaves 1 bunch
  3. Garam masala 1 tsp
  4. Tomato 1
  5. Salt to taste
  6. oil
  7. ghee
  8. For Masala:
  9. Onion 3
  10. Green chilly 6
  11. Garlic cloves 4
  12. Clove 2
  13. Cinnamon 1 stick
  14. Star anise 2
  15. Fennel 1/2 tsp


  1. For masala: Fry 1 onion and all the other items listed under masala. Do not fry much. Cool it and grind with coriander leaves.
  2. Soak rice in water for 20 minutes.
  3. Take a pressure cooker. Add ghee. Add 2 thinly sliced onions and saute. Add tomato. Once the tomatoes are soft, add ground masala with little garam masala. Add methi leaves.
  4. Now add rice and salt.
  5. Fry for about 5 minutes and add hot water just above the level of rice. Close the lid of the cooker and pressure cook for 3 whistles.
  6. Serve hot with raita or pickle.
