This potato roast is very simple and easy to make and of course tastes so yummy.

Ingredients Serving: 4

  1. Potatoes 4
  2. Onions 2 chopped
  3. Garlic 5 cloves chopped
  4. Ginger 1 inch piece chopped
  5. Red chilly powder 1 1/2 teaspoons
  6. Salt to taste
  7. Mustard seeds 1/2 teaspoon
  8. Curry leaves a few
  9. Oil 2 tablespoons


  1. Wash the potatoes well and cut them into slightly thick round pieces along with the skin.
  2. In a pressure cooker add the potatoes, onions, ginger, garlic, red chilli powder and salt. Add just enough water and cook them for one whistle.
  3. Now heat oil in a frying pan, add mustard seeds, curry leaves and allow them to splutter, then add the cooked potatoes along with the remaining water.
  4. Cook until all the water evaporates and then roast for few minutes.
  5. Garnish and serve hot.
