Ingredients to make Belgaum kunda/Belagavi kunda

  • 1 litre full cream milk
  • 3/4 cup sugar or to taste
  • 2 tbsp ghee
  • 2 tbsp curd
  • 1 tbsp semolina
  • 1 tbsp edible gum
  • 1/2 tsp green cardamom powder (optional)
  • chopped almonds for garnishing

How to make Belgaum kunda/Belagavi kunda

  1. boil the milk in a kadai on high flame
  2. as milk starts to boil, reduce the flame and continue simmering for 25-30 minutes
  3. keep stirring in every 5-10 minutes
  4. in another pan, heat 1 tbsp ghee and fry edible gum until it puffs up
  5. in the same pan, fry semolina until it turns brown in colour
  6. add both the fried ingrediants to the milk and continue to simmer for another 5 minutes
  7. add curd to milk and turn off the flame, mix well
  8. in a pan, heat 1 tbsp ghee and add sugar, allow it to melt completely
  9. add the melted sugar to the milk
  10. place the curdled milk back on flame and allow the milk to simmer further, stirring continuously
  11. after 15-20 minutes, liquid gets dried up and kunda is ready
  12. add cardamom powder (optional)
  13. allow it to cool down to room tempreture
  14. garnish with almonds and serve
