About Panki Recipe

This is a traditional Gujarati dish which is very healthy as it is prepared by steaming the rice flour batter in between banana leaves on a pan.

Ingredients to make Panki

  • Rice flour 1 cup
  • curd 1/2 cup
  • ginger chilli paste 1 tbsp
  • coriander 2 tbsp
  • salt 1 tsp
  • turmeric 1/4 tsp
  • Asafetida 1/4 tsp
  • banana leaves

How to make Panki

  1. 1 CUP RICEFLOUR,1/2 CUP CURD,1 TBSP GINGER CHILLI PASTE,2 TBSP CORIANDER,1 TSP SALT,1/4 TSP TURMERIC
  2. PUT ALL THE INGREDIENTS IN A BOWL.
  3. ADD 1/4 TSP EACH OF TURMERIC AND ASAFETIDA.
  4. MIX WELL WITH SPOON AND THEN ADD WATER AS REQUIRED TO FORM A MEDIUM CONSISTENCY BATTER.
  5. THE CONSISTENCY SHOULD BE SUCH THAT WE CAN SPREAD EASILY INTO THIN LAYER.
  6. TAKE WASHED AND CLEANED BANANA LEAVES CUT INTO PIECES.
  7. NOW BRUSH OIL ON THE TOP SIDE(DARK GREEN) OF BOTH PIECES.
  8. POUR A TBSP OF BATTER AND SPREAD THIN.
  9. COVER WITH THE OTHER PIECE AND PRESS LIGHTLY.
  10. PLACE THIS ON A HOT TAWA WHICH IS PREHEATED BUT KEEP THE FLAME AT LOW WHILE ROASTING PANKI.
  11. WHEN THE COLOUR OF TOP LEAF CHANGES LITTLE LIFT THE LEAF AND CHECK.IF PANKI DOESN'T STICK,IT'S DONE.
  12. FLIP TO COOK ON OTHER SIDE SIMILARLY.CHECK AGAIN.IF DONE REMOVE FROM PAN.
  13. SIMILARLY PREPARE ALL PANKIS AND SERVE ALONGWITH LEAF.LET THE LEAF BE REMOVED JUST BEFORE EATING.
