ABOUT Green Corn Panki RECIPE

Panki is batter cooked in banana leaves. It's a Gujarati delicacy having lots of variations. It is served steaming hot as snacks. Today's recipe is prepared with batter of sweet corns and fresh green coriander leaves.

Ingredients Serving: 8

  1. Sweet corn kernels 1 cup
  2. Gram flour 1/4 cup
  3. Semolina 1 tbsp
  4. Green coriander leaves 1/2 cup
  5. Ginger and green chilies paste 1 tbsp
  6. Salt 1 tsp
  7. Turmeric powder 1/4 tsp
  8. Eno salt 1 tsp
  9. Banana leaves - as required
  10. Oil to grease banana leaves

Instructions

  1. Grind corn to a fine paste without water.
  2. In a mixing bowl , add corn paste, gram flour, semolina, chopped green coriander leaves, salt, turmeric powder and ginger chili paste. Mix well.
  3. Add 1-2 tbsp water if required to make a smooth batter.
  4. Add one tsp eno salt and mix well.
  5. Cut banana leaves in desired shape and size.
  6. Grease leaf cut outs. Heat a pan over low heat
  7. Place banana leaves on hot pan with greased side facing up.
  8. Add little batter on leaves and cover with another leaf with greased side facing down.
  9. Press gently to spread batter thin and evenly.
  10. Cook for 1.5 minutes and flip.
  11. Cook for another 1 minute and check if banana leaf easily peels without sticking else cook for some more time
  12. Serve hot with coriander chutney.
