Ingredients Serving: 10

  1. For the dough of puri
  2. 1 cup rawa (semolina)
  3. 1 cup maida
  4. 2 pinches baking powder
  5. 5-6 tbsp water or as needed
  6. 2 tbsp oil + oil for frying
  7. For pani (spicy green pani)
  8. 1/2 bunch fresh coriander leaves
  9. 1/2 bunch fresh mint leaves
  10. 2 green chillies
  11. 1 small piece of ginger
  12. 2 small garlic cloves
  13. 2 tbsp lemon juice
  14. 1 tsp sugar
  15. 1/2 tsp chaat masala
  16. 1/4 cup water
  17. Salt to taste
  18. 1 cup chilled water
  19. For pani(sweet tamarind and dates pani)
  20. 1/2 cup boiled and pureed deseeded dates
  21. Pulp taken from a small lemon sized tamarind
  22. 1/2 cup jaggery grated
  23. 1/2 tsp chili powder
  24. 1/2 tsp fennel powder
  25. 1/2 tsp roasted cumin powder
  26. 1/2 cup water
  27. Salt to taste
  28. 1 cup chilled water
  29. For Filling
  30. 1/2 cup sprouts
  31. 1 boiled potato
  32. Few boiled black channa
  33. Salt to taste

Instructions

  1. For puri make a dough by adding rawa, maida,oil,baking powder and water. The dough should be neither too hard nor too soft. Cover this with a wet muslin cloth and keep it aside for 30 mins.
  2. After 30 mins divide the dough into equal small lemon sized balls and roll them out. Keep the rolled out dough again inside a muslin cloth so that they don't dry up.
  3. Heat oil and in a medium flame fry this puri till they golden brown. Remove in kitchen towels and let it cool.
  4. Now when its cool preheat the oven at 100 degree c and bake this puris for 5 mins. Let it cool and store in air tight container.
  5. For spicy green pani
  6. In a blender add chopped coriander leaves,mint leaves, ginger,garlic,sugar,salt,lemon juice, water and chaat masala and give it a nice blend till it looks like a fine paste. Mix this with chilled water and keep in fridge till further use.
  7. For sweet tamarind and dates chutney
  8. Boil pureed dates,lemon pulp,jaggery,chilli powder,cumin powder,fennel powder,salt, ginger powder and water all together.
  9. Mix required amount with chilled water and keep in fridge
  10. Filling for pani puri
  11. In bowl mash potatoes and add in salt sprouts and boiled channa and mix well.
  12. Assembling pani puri
  13. Take a puri and make a hole right in centre. Fill in the mashed potato mix.
  14. Fill it with pani of your choice and serve immediately.
