Ingredients Serving: 4

  1. To make puri
  2. Semolina_1 cup
  3. Water-1/2 cup
  4. All purpose flour_1/4 cup
  5. For making tamarind chutney
  6. Tamarind_1/2 cup
  7. Boiling water_1 cup
  8. Cumin powder _1teaspoon
  9. Ginger_a small piece
  10. Red chilly powder-3/4 teaspoon
  11. Brown sugar_3 table spoon
  12. Garam masala _a pinch
  13. For frying
  14. Oil_1 cup
  15. For making pani
  16. Tamarind_2 table spoon
  17. Boiling water_1/2 cup
  18. Mint leaf_1 cup
  19. Roasted cumin powder-1 tea spoon
  20. Green chilly _4
  21. Water_2 cup
  22. Ginger_a small piece
  23. Sugar_1/2 tablespoon
  24. Lime juice_2 tablespoon
  25. Salt to taste
  26. For pani puri stuffing
  27. Boiled potato_1 cup
  28. Coriander leaves _2 tablespoon
  29. Onion,_1 medium finely chopped
  30. Cumin powder_1/2 teaspoon
  31. Black salt_ to taste
  32. Chat masala_1 teaspoon
  33. Red chilly powder _1/2 teaspoon
  35. Sev_1/2 cup


  1. Mix all purpose flour and warm water and knead the dough.
  2. Then add all purpose flour and knead again for 15 minutes to get smooth dough.
  3. Covered with a damp cloth and leave it aside for 15 minutes.
  4. Make small pooris out of it and deep fry in the oil.
  5. For making tamarind chutney
  6. Half cup tamarind soaked in boiling water and strained.
  7. Add cumin powder,chilly powder,garam masala, ginger, brown sugar in a pan and boil it for 10 minutes.
  8. Refrigerate when it cools.
  9. For making pani
  10. In a blender add strained tamarind (soaked in boiling water),mint leaf ginger, green chilly ,cumin powder ,chat masala and salt.
  11. And blend till smooth and strain.
  12. And sugar lime juice and water and refrigerate it.
  13. For pani puri stuffing
  14. Peel the boiled potatoes and chop them.
  15. In a bowl mix potaoes,onion,coriander leaves ,cumin powder,black sal,red chilky powder ,chat masala and keep it aside.
  16. Serving poori
  17. Crack the top of the poori with a spoon.
  18. Add 2 teaspoon potato filling in the poori.
  19. Then add pani ,tamarind chutney.
  20. Garnish with sev.
  21. Serve immediately.
