Rice kheer / Payasam / pudding

Ingredients to make Rice kheer / Payasam / pudding

  • 3/4 cup : Raw rice
  • 3 to 3.5 cups : Whole milk
  • 3/4 cup : sugar or to taste
  • Few roasted nuts of choice chopped
  • 1 tsp : cardamom powder
  • A pinch saffron

How to make Rice kheer / Payasam / pudding

  1. Wash the rice and soak in enough water for atleast half hour.
  2. In a deep pan add milk and bring this to a boil, once it boils add the soaked rice and stir.
  3. Now keep this on medium heat and continue cooking until rice is cooked and slightly soft to touch.
  4. Next add in the sugar , cardamom and saffron.
  5. Continue cooking until the sugar is dissolved and slightly thick pudding like consistency.
  6. Later turn off the heat and garnish with roasted and chopped nuts of choice.
  7. Silky , creamy and sweet Rice kheer / payasam is ready to be served !! The saffron and cardamom just enhance its richness further more !!

My Tip:

Do not over cook the rice just cook like regular white rice but instead of water in milk.. You can adjust the sweetness according to preference ...but just keep in my mind that it sweetens bit more as it cools !!
