Ingredients Serving: 4

  1. 1/2 cup fine pearl millet flour (baajra flour)
  2. 1 Tablespoon Ginger-garlic paste
  3. salt to taste
  4. 1 tablespoon white sesame seeds
  5. handful of freshly chopped coriander leaves
  6. 1 onion finely chopped
  7. 1.5 teaspoon red chilli powder
  8. 2 Green chillies finely chopped
  9. 1 teaspoon turmeric powder
  10. 1 tablespoon garam masala/all spice powder
  11. 5-6 curry leaves chopped finely
  12. 1 teaspoon carom/ajwain seeds
  13. oil for Deep frying
  14. 1/3 cup plain unsalted buttermilk


  1. place the Millet flour in a mixing bowl
  2. add the onion,ginger garlic paste and all the dry ingredients along with salt and mix with a spoon
  3. add buttermilk gradually to knead a soft dough (it will be fast, as the flour can absorb liquids faster)
  4. create tikkis/vadas from the dough by greasing your palms
  5. keep them covered for 10 minutes
  6. post resting, heat oil for deep frying
  7. fry the vadas in batches until crisp and light brown on both sides
  8. place the fried vadas on an absorbent paper for few minutes
  9. serve warm as an accompaniment with lunch/dinner or as an evening snack with your favourite chutnies
