ABOUT Vietnamese Rice Paper Roll RECIPE

Rice Paper Rolls are stuffed with thin noodles sautéed with julienned colourful vegetables and served with a homemade tangy and spicy chilli sauce.

Ingredients Serving: 4

  1. Readymade pack of Vietnamese or regular Rice Paper Roll Sheets
  2. For the sheet to be rolled in:
  3. a deep big bowl of warm water
  4. For the filling:
  5. 1 tablespoon oil for sautéing
  6. 1 1/2 cup of julienned vegetables of your choice( coloured bell pepper, zucchini, carrot, green beans, mushroom etc )
  7. 1 cup julienned Thai mango ( optional ) ( any mango which is not too soft )
  8. few halved lettuce leaves
  9. 1 pack of thin noodles or rice noodles or vermicelli boiled and coated with oil to avoid sticking
  10. Salt as per taste
  11. Black pepper a pinch
  12. a pinch sugar
  13. a pinch cornflour
  14. 1/2 tablespoon soya sauce,
  15. 1/2 teaspoon chilli sauce ( optional)
  16. For the dipping sauce:
  17. 1 cup soya sauce
  18. 1 tablespoon honey
  19. 1 teaspoon finely chopped ginger
  20. 1 teaspoon finely chopped green chillies ( optional)
  21. 1 tablespoon finely chopped coriander
  22. 1 teaspoon ketchup
  23. 1 teaspoon Tabasco
  24. salt as per taste


  1. For the filling:
  2. In a pan take some oil and sauté the julienned vegetables lightly.
  3. Add the noodles or the vermicelli
  4. Add salt and the remaining ingredients for the filling and toss well
  5. Adjust taste
  6. For the Rice paper rolls:
  7. In a deep bowl of warm water, gently dip the rice Paper roll and very gently using both hands dip it well until soft in texture
  8. It’s a fragile sheet, very gently remove the excess water and place the sheet on a dry surface with a soft clean cloth underneath so that it soaks the excess water
  9. Filling and folding of the Rice paper roll:
  10. Take the filling and place it on one side of the sheet
  11. Cover it with the lettuce leaf for easy grip and roll.
  12. Add a piece of the mango
  13. Fold in such a way so that the sides are sealed inwards gently and a bit tight roll
  14. Cut it slantwise for presentation
  15. For the sauce:
  16. In a pan add all the ingredients required for the sauce except for the coriander.
  17. Give it a quick stir and boil and remove from fire.
  18. Adjust the sweetness and the salt as per taste.
  19. Remove it in a dipping bowl and lastly add coriander.
  20. Serve cold as a starter for any party along with the dip.
