ABOUT Paneer Tikka Biryani RECIPE

Paneer tikka biryani is a combination of basmati rice and Paneer Tikka Masala, topped with brown onions, mint leaves and fried Cashewnuts.

Ingredients Serving: 4

  1. Paneer - 200gm
  2. Yoghurt - 1/2 cup
  3. Red chilli powder - 1 tsp
  4. Turmeric powder - 1/2 tsp
  5. Tandoori masala - 1 tsp
  6. Ginger+garlic paste - 1 tsp
  7. Garam Masala powder - 1/2 tsp
  8. Salt - As required
  9. Basmati Rice - 2 cup
  10. Water - 4 cup
  11. Shahi jeera - 1/4 tsp
  12. Cloves - 5
  13. Green cardamom - 5
  14. Brown Cardamom - 2
  15. Bay leaves - 3
  16. Cinnamon - 2 stick
  17. Ghee - 1 tbsp
  18. Mustard oil - 1 tsp
  19. Lemon juice - 2 tsp
  20. Rose water - 3 tsp
  21. Saffron strands - a few
  22. Milk - 2 tbsp
  23. Mint leaves - 1 tbsp(chopped)
  24. Fried onions - 1/2 cup
  25. Green chilli - 2
  26. Fried Cashews - 12

Instructions

  1. Blend curd and ginger-garlic till smooth.
  2. Blend Tandoori masala powder, garam masala, curd paste, turmeric powder and red chili powder together till smooth.
  3. Transfer to a mixing bowl.
  4. Add salt and mustard oil to it.
  5. Mix well and marinate paneer cubes with this paste.
  6. Close the bowl and keep in refrigerator for 2-3 hrs or preferably overnight.
  7. Remove the bowl from refrigerator and keep aside for 20 mins.
  8. Fry paneer cubes on tava / frying pan till golden brown or grill it in oven.
  9. Take 4 cups water in a big wok.
  10. Add shahi jeera, cloves, black pepper, cardamom green, cardamom brown, bay leaf, cinnamon stick, salt, lemon juice, oil and boil the water.
  11. When it starts boiling add soaked basmati rice.
  12. Cook the rice till semi cooked and drain the water.
  13. Transfer the rice in a big plate.
  14. In the same wok, make layer of fried paneer and cooked rice.
  15. Firstly put some ghee and heat.
  16. Then put fried paneer and rice.
  17. Again put fried paneer.
  18. Then add fried onion, green chilli, mint leaves and leftover rice on the top of paneer.
  19. Soak saffron and milk in a bowl.
  20. Sprinkle rose water and saffron milk over rice.
  21. Garnish with mint leaves and leftover fried onions.
  22. Cook covered on low heat for 8-10 minutes.
  23. Delicious paneer tikka biryani is ready.
  24. Transfer in serving plate and garnish with fried cashews.
  25. Serve hot with Raita and salad.
