ABOUT Nani's Vegetable biryani RECIPE

Whenever I miss my nani maa, I always make this biryani and feel still she is with us.

Ingredients Serving: 4

  1. Basmati rice 2 cups or 300 gm
  2. Carrot 1 big or 2 small
  3. Cauliflower 10 to 15 small flowers
  4. Beans 50 gm
  5. Green peas 50 gm
  6. Potato 1 small
  7. Green chili 2
  8. Onion 2 big size
  9. Paneer 100 gm
  10. Fresh tomatoes 2
  11. Cinnamon powder 1 tsp
  12. Cooking oil 6 tbsp
  13. Cashews 20 gm
  14. Raisins 20 gm
  15. Lemon ( chopped)
  16. Green cardamon 4 to 6
  17. Black cardamon 1
  18. Cloves 4
  19. Ginger garlic paste 3 tsp
  20. Curd 2 tbsp
  21. Salt as per taste
  22. Cumin seeds 1 tsp
  23. Turmeric powder 1 tsp
  24. Coriander powder 1 tsp
  25. Garam masala 1 tsp
  26. Veg biryani powder 1 tsp
  27. Mint leaves 6-7
  28. Coriander leaf chopped 2 tbsp

Instructions

  1. Wash rice nicely and keep in water with 1 tsp salt for 15 to 20 minutes.
  2. In a pan add cooking oil.
  3. Add cumin seeds , after crackle, fry onions and ginger garlic paste and green chilly. After fry this add all the vegetables and all powder spices in it and cover the pan with lid.
  4. Let it cook on slow flame for 15 to 20 minutes.
  5. Meanwhile on another gas stove take a cooker put rice, curd, salt, and all whole spices and let it cook.
  6. In a single whistle switched off the gas.
  7. Now mix all the cooked vegetables in cooked rice and mix well.
  8. Serve it hot with onion raita or some gravy.
