ABOUT Sindhi Masala Koki RECIPE

Koki is a masala Paratha made with plain wheat flour, onion and few chosen spices. the dried pomegranate and coriander seeds differentiates a Koki from other parathas.you can always modify the ingredients as per your taste preferences. this recipe is made with the original ingredients. best accompaniments are curd and pickle

Ingredients Serving: 2

  1. 1.5 cup whole wheat flour
  2. 1 finely chopped onion
  3. a handful of finely chopped coriander leaves
  4. 1 teaspoon crushed coriander seeds
  5. 1 tablespoon dried pomegranate seeds
  6. 1 tablespoon red chilli
  7. 1 green chilli chopped finely
  8. Salt to season
  9. 1 teaspoon crushed black pepper to season
  10. Warm Water to knead
  11. 1 tablespoon oil to knead+ (more to pan fry if not using ghee)
  12. 1-2 tablespoon ghee to pan fry

Instructions

  1. add the flour in a mixing bowl
  2. add the rest of the ingredients besides water and oil
  3. mix well first and then knead into soft dough using the required amount of warm water
  4. add 1 tablespoon oil and knead for a few seconds
  5. place the dough covered for 30 minutes
  6. post resting heat a tawa
  7. scoop out lemon sized portions of the masala dough and start to roll using some flour dusting
  8. place each rolled dough on the tawa and pan fry till both sides are cooked using some ghee /oil in the process
  9. serve warm accompanied with curd and pickle
