ABOUT Desi quesadilla RECIPE

I had some left over palak parathas which tempted me to use it to make nothing other than a nice tasty quesadilla.Quesadilla is a mexican dish. A tortilla stuffed , folded and grilled .so whenever you have chapatis or parathas left over dont think twice to make a quesasilla out of it. It needs only any kind of stuffing as per your choice and cheese to stick the folded stuffed chapati. Thats all your tasty desi dish gets a mexican makeover.

Ingredients Serving: 5

  1. 2 parathas
  2. 2 large potatoes
  3. half teaspoon mustard
  4. quarter teaspoon cumin
  5. quarter teaspoon Kalonji seeds
  6. 1 teaspoon red chili powder
  7. 1/2 tsp Turmeric
  8. Salt to season
  9. 2 tbsp Fresh chopped coriander
  10. 1 tsp oil
  11. Mozerrella cheese as required
  12. Chilli flakes and oregano as required


  1. Boil,peel and mash te potatoes roughly
  2. Heat oil in a sauce pan. Add mustard .Let it splutter
  3. Add cumin ,then the mashed potatoes and spice powders.
  4. Add salt mix and leave for 5 minutes on low heat.
  5. Open mix the chopped coriander .Stuffing is ready
  6. Heat a tawa
  7. Place the tortilla or paratha on a plate
  8. Spread half of the stuffing on one side of the paratha or a thin layer all over the paratha
  9. Now spread cubed or grated mozerrella on one half
  10. Fold
  11. Grill on the hot tawa with little oil or butter ,just till the cheese melts
  12. Cut with a pizza cutter and serve with some sauce. Delicious tasty quesadilla. Have it right away.
  13. Sprinkle with chilli flakes and oregano if you like
