ABOUT Matti ki soup RECIPE

This is cauliflower soup and I cooked in earthen (matti) pot.

Ingredients Serving: 2

  1. Cauliflower tiny chopped 1 1/2 cup
  2. Grated carrot 1/2 cup
  3. CASHEW PASTE 1TBSP
  4. All purpose flour 1 tbsp
  5. Garlic & Herb's butter 1 tbsp
  6. Coconut milk 1/2 cup
  7. Milk 1/2 cup
  8. milk powder 1tsp
  9. Water 1/2 cup
  10. Garlic chopped 2 cloves
  11. Salt and pepper taste wise

Instructions

  1. High heat in a Matti pot. After couple of minutes low heat this pot and add oil butter.
  2. Add garlic and saute for a few seconds till aroma. Then add the flour and cook for about 2 min. Continuously stir it to avoid lumps.
  3. Slowly add milk and water with continuous stirring. Take care not form lumps. Bring the mixture to a boil.
  4. Now add medium grated culiflower, grated carrots, salt and pepper. Cook the mixture for about 8-10 mins.
  5. Add cashew paste mix well and cook for another 2-3 min.
  6. Turn off the heat and serve warm.
