This achaar is must in winters, gobhi and gajar with spices add a yumm taste to pickle.

Ingredients Serving: 10

  1. Gobhi/cauliflower-1 kg
  2. Gajar/Carrot-1/2 kg
  3. Garlic cloves-10-12
  4. Green chilli sliced long 10-12
  5. Ginger grated 2 tbsp
  6. Mustard oil-1/3 cup
  7. Fennel seeds/saunf-2 tsp
  8. Rai powder-4 tsp
  9. Salt 2 spoon or as per taste
  10. Turmeric powder-1/2 tsp
  11. Red chilli powder-1 tsp
  12. Carrom seeds-2tsp
  13. Methi powder/yellow mustard seed powder-1/4 tsp
  14. White vinegar -1/2 cup
  15. Jaggery-150 gm


  1. Firstly wash and cut cauliflower and carrot .
  2. Next heat water in pan ,add cauliflower to it cook till one boil in water comes take out gobhi .
  3. In same water add carrot ,bring it to boil,take them out
  4. Let water get out of them completely.
  5. Next keep them in sun for 5 hours.
  6. Next heat oil in pan till raw smell goes
  7. Add grated garlic to it.saute for some time.next add grated ginger ,cook both at low flame till its colour gets brown .add fennel seeds/sauf to it.saute few seconds and switch off gas and let it cool.
  8. After it cools add gobhi,gajar ,green chillies and mix well
  9. Also add carrom seeds,turmeric powder,chilli powder,salt,methi powder,rai powder mix well
  10. In other pan add both vinegar and jaggery .mix together ,switch off gas as it gets forthy.
  11. Cool it and add to gobhi gajar mix .mix well ,keep in airtight container,can keep for 2days in sun and enjoy after 2 days.
