Aloo ki Sabzi

Ingredients to make Aloo ki Sabzi

  • 4-5 boiled potatoes
  • 1 onion
  • 1 tomato
  • 3-4 garlic cloves
  • piece of ginger
  • Green chilli
  • Pinch of hing
  • 1 tsp cumin seeds
  • 1/2 tsp red chilli powder
  • 1/2 tsp turmeric powder
  • 1 tsp coriander powder
  • Garam masala
  • Kasuri methi
  • salt to taste
  • 2 cups of water
  • 1 tbsp oil
  • 4-5 curry leaves
  • coriander leaves

How to make Aloo ki Sabzi

  1. Grind onion, garlic, ginger and green chilli.
  2. Take a wok add oil, add cumin seeds, curry leaves and hing.
  3. As it starts crackling, add ground paste. Saute it cook for 1-2 minutes.
  4. Add pureed tomato.
  5. Cook it till the oil separates.
  6. Add dry masalas, saute it.
  7. Add a little water and mix the masalas.
  8. Add chopped boiled potatoes.
  9. Cook for 1 minute.
  10. Add the remaining water.
  11. Get it boiled, cook for 3-4 minutes.
  12. Sprinkle garam masala and chopped coriander leaves.
  13. Enjoy Sunday brunch with Poori Aloo.

My Tip:

Same recipe can be made with Raw potatoes also, just Pressure cook them.
