ABOUT Hilsa vuna khichdi (in bengali style) RECIPE

This is one of my comfort foods,my mother's recipe , whenever I prepared this I felt nostalgic , very tasty ,yummy but healthy recipe.

Ingredients Serving: 3

  1. 6 pieces of hilsa fish
  2. 1½ cup gobindobhog rice or any small grain rice
  3. 1 cup Yellow lentils or moong dal,dry roasted
  4. 1/2 cup Red lentils or masoor dal
  5. 1" cinnamon stick
  6. 5-6 nos green cardamom
  7. 1 nos bay leaf
  8. 2 nos whole dry red chilli
  9. 1 big onion, sliced
  10. 1/2 tsp garlic paste
  11. 1 tsp ginger paste
  12. 2 tsp turmeric powder
  13. 1 tsp red chilli powder
  14. 6-7 nos green chillies, splits
  15. 3 tsp salt or as per taste
  16. 1/4 tsp sugar
  17. 4 tbsp mustard oil
  18. 1/4 tsp clarified butter or ghee
  19. 4½ cup boiling water

Instructions

  1. Soak and wash rice and two types of lentils, drain it properly.
  2. Marinate fish for 5-10 minutes with salt, turmeric and red chilli powder, heat oil in pan till it reaches it's smoke point and slightly fry the fish, keep it aside.
  3. In same oil, add bay leaf, whole dry red chilli, cinnamon, green cardamom , let it crackle, then add onion and fry it till translucent..
  4. Add garlic ginger paste, sugar, red chilli powder, turmeric, cook it till oil separates.
  5. Add rice, lentils, salt and ghee,cook it for couple of minutes.
  6. Now add boiling water, keep it on high flame for 2 minutes, cover with lid and keep in low flame for 8-9 minutes or till the water evaporates a bit.
  7. Open the cover and scoop out half khichdi, then arrange the fish pieces as shown below.
  8. Now place the rest of the khichdi over the fishes, add splits green chilli, cook in very low flame for 5-7 minutes after air-sealing the pan.
  9. Serve hot and enjoy.
