ABOUT Malabar Spinach with Curds RECIPE

Ingredients Serving: 2

  1. Chopped Malabar Spinach - 1 bunch
  2. Curds - 1 cup
  3. Salt to taste
  4. Vegetable oil - 1 tsp
  5. Green chillies as required
  6. Curry leaves (small) - 10
  7. For Seasoning - Fenugreek seeds, Mustard seeds, Cumin seeds

Instructions

  1. Heat vegetable oil in a pan.
  2. Add mustard seeds, cumin seeds and fenugreek seeds. Fry till crackling.
  3. Now add the chopped greens, green chilly and salt. Cover it with a lid and cook over low flame for 2 minutes.
  4. Take it into a bowl. Let it come to room temperature.
  5. Now take a cup of curds and stir it well. Add this to the cooked greens. Mix well.
  6. Garnish this with curry leaves and serve it with rice or chapati.

This is a classic comfort dish. It is healthy and light on the tummy too... nice!
