ABOUT Lamb Chukka RECIPE

A delicious spicy meat side dish that goes well with rotis and rice.

Ingredients Serving: 4

  1. Mutton/ Lamb 500 gms
  2. Big onions and small onions 1 cup
  3. Ginger-Garlic paste 1 tbsp
  4. Curry leaves
  5. Chilli powder 2 tsp
  6. Coriander powder 2 tsp
  7. Turmeric powder 1/2 tsp
  8. Crushed pepper 1 tsp
  9. A mix of cinnamon, cloves, cardamoms, fennel seeds 1 tsp
  10. Lemon juice 1 tsp
  11. Salt as required
  12. Coriander leaves- a handful
  13. Red chillies 2 nos

Instructions

  1. Heat a wok, add oil and fry the chopped small and big onions.
  2. After 5 minutes add the washed lamb pieces and cook on a high flame for 5 mins or until the water evaporates.
  3. Meanwhile grind the ginger-garlic and the garam items together and add it to the wok.
  4. Fry it for about 5 mins then add in the red chilli powder, coriander powder and turmeric powder along with salt.
  5. Pour in 1 cup of water and close with a lid. Let it cook for 30 mins or until the meat is tender. (If you see that the water you poured is too much, then you can keep it in a high flame and keep roasting it till the water evaporates.)
  6. Now add in the chopped coriander leaves and crushed pepper, mix it well and allow to cook for 2 more mins and add the lime juice. Mix it well.
  7. Turn off the stove. Now take another wok and add oil, season it with mustard, red chillies and a handful of curry leaves, a dash of pepper powder. Fry it well and add it to the meat.
  8. Mix it well and it's done!
