First time i tried different states in north indian cuisine.Its really very hard to get veg recipes from north east states but somehow managed it.some recipes are tried from blog.

Ingredients Serving: 2

  1. Lacko Daal(Gujarat ):
  2. Toor dal -1/2 cup
  3. Ghee -1/2 tbsp
  4. Jaggery-1/2 tsp
  5. Turmeric powder-1/2 tsp
  6. Paanch Poran Tarkari(Arunachal Pradesh):
  7. Potato -1,Peeled and cubed
  8. Brinjal-,Sliced
  9. Paanch Poran-1 tsp
  10. Bay leaf -1
  11. Green chillies-2,chopped
  12. Turmeric Powder-1/4 tsp
  13. Milk -1 tsp
  14. Sugar -1/2 tsp
  15. Mustard oil -1 tsp
  16. Kashmiri Baignan(Kashmir)
  17. Brinjal -1 ,large and sliced lenghtwise
  18. Tomato -2,finely chopped
  19. Red chilli powder-1 tsp
  20. Oil - for fry
  21. Bilhari Tok(Assam):
  22. Ripe tomates-3,finely chopped
  23. Mustard Oil-1 tbsp
  24. Onion -1,finely chopped
  25. Paanch Poran-1 tsp
  26. bay leaf-1
  27. Dry red chilli-1
  28. Turmeric Powder-1/4 tsp
  29. Jaggery- 1/4 tsp
  30. Chaas :
  31. Thick Curd-1 cup
  32. Cold water _3 cups
  33. Black salt-1 tsp
  34. Roasted cumin powder-1 tsp
  35. Mint leaf- for garnish
  36. Naaspati Ki Sabzi(Himachal Pradesh):
  37. Pears -2,peeled and cubed
  38. Mustard oil -1 tsp
  39. Ginger Garlic paste-1/4 tsp
  40. Coriander seeds-1/4 tsp
  41. Cumin seeds-1/4 tsp
  42. Dry red chilli-2
  43. Pepper powder-1/4 tsp
  44. Turmeric Powder-1/4 tsp
  45. Sugar-1/4 tsp
  46. Paneer Kheer (Haryana):
  47. Milk-1 cup
  48. Crumbled Paneer-3/4 cup
  49. Sugar-1/2 Cup
  50. cardamom powder-1/4 tsp
  51. Saffron- few strands
  52. Ghee roasted cashew and Raisin- For garnish
  53. Jeera Rice (Punjab):
  54. Basmati-1 cup
  55. cumin seeds -1 tsp
  56. Ghee -1 tbsp
  57. bay leaf-1
  58. Cardamom-1
  59. Cloves-3
  60. Raw Turmeric Pickle :
  61. Raw Turmeric- 1/4 cup ,peeled and chopped
  62. Lemon Juice- 2 tsp
  63. Green chilli- 1,finely chopped
  64. Khoba Roti (Rajasthan):
  65. Wheat flour-1 cup
  66. Ghee -1 tbsp +2 tbsp
  67. Salt- to taste
  68. For salad:
  69. Cucumber-1
  70. Carrot-1

Instructions

  1. Lacko Daal: Cook the dal with salt and turmeric powder with enough water.
  2. Once it cooked add jaggery and ghee.mix it .
  3. Paanch Poran Tarkari :Heat oil in a kadai temper with paanch poran mix,saute with Bay Leaf,chopped green chillies.
  4. Then add the veggies,turmeric powder, salt,Milk.cook with enough water until its done.
  5. Kashmiri Baignan:Deep fry the Brinjal until it turns golden brown.
  6. Cook the tomatoes with salt .Once it become mushy add red chilli powder ,saute and add fried Brinjal. Mix well.
  7. Bilhari Tok : heat oil in a kadai add paanch poran, Bay Leaf, red chilli. Saute with onion.
  8. Then add the tomato, salt,turmeric powder. Once the raw smell goes away add jaggery and mix.
  9. Chaas : Blend the all ingredients with salt except mint Leaf.
  10. Pour in tall glass .
  11. Naaspati Ki sabzi : heat oil in a kadai saute ginger garlic paste. Then add the coriander seeds, cumin seeds,Pepper powder, turmeric.
  12. Followed by chopped pears ,salt and sugar.cook on slow flame until done.
  13. Paneer kheer : Boil the milk Well, Then add the crumble paneer.
  14. Once it cooked add sugar,Cardamom powder, saffron and mix. Finally garnish with roasted cashews and Raisin
  15. Jeera Rice : wash and soak the basmati for 10mins. In a pressure cooker add ghee,temper with Bay Leaf, Cardamom, cloves, cumin seeds.
  16. Add soaked Rice with salt and 1&1/2 cups water.cook it for 2 whistles. Once the pressure settled down fluff the Rice.
  17. Raw Turmeric Pickle : Mix the turmeric, lemon juice, green chilli with salt and mix.
  18. Khoba Roti : mix wheat flour, salt and 1tbsp ghee.mix and make a stiff dough by adding enough water.
  19. Rolled out a thin circle and heat the griddle.
  20. Put the roti on the pan,cook .flip it on other Side.
  21. Make a design on the top by slightly punch it. Then cook it on both sides well
  22. Then cook it on direct flame ,make sure the flame is low
  23. Now the roti is ready and smear it remaining ghee.
  24. Peel the Cucumber and Carrot and sliced it lenghtwise for Salad.
