ABOUT North Indian desi chicken RECIPE

chicken or mutton in North India in cooked in onion gravy, the main flavour of the gravy comes from the addition of large amounts of onions.

Ingredients Serving: 5

  1. Chicken 1 kg
  2. onion 1 kg
  3. ginger 100 grams
  4. garlic-10-12 cloves
  5. Bay leaf-2
  6. cinnamon sticks-1 inch
  7. Green cardamom-2-3
  8. Cloves-2-3
  9. turmeric powder-1-1.5 tsp
  10. chilli powder-1tsp or as per your taste
  11. roasted coriander powder-2 tbsp
  12. black pepper powder-1/2 tsp
  13. Jeera Powder-1/2 tsp
  14. Garam masala-1 tsp
  15. ghee- for tempering

Instructions

  1. wash the chicken and drain the water properly
  2. cut the onions into slices
  3. put mustard oil in the Kadhai
  4. add cumin seeds, green cardamom ,bay leaves, red chilli, cinnamon sticks, cloves and any other whole garam masala you want to add
  5. when it starts crackle, add all the sliced onions,and cook well on medium heat
  6. if want to cook little faster u can add salt in the onions
  7. now add chicken in the wok
  8. cook for sometimes, approx 5 minutes, then add the dry masalas- turmeric powder, chilli powder,coriander powder, black pepper powder, jeera powder mix well and start cooking at low flame
  9. keep on cooking on low flame until oil starts getting separated
  10. now add freshly ground garam masala in it and cover cook for 5-10 more minutes then remove from flame. if u want gravy then you can add little water as per your requirements.
  11. add chopped coriander if you want
  12. put 1 tbsp hot ghee for tempering . now you can serve
