ABOUT Masala baingan in mint tomato gravy RECIPE

Masala baingan is a popular north Indian recipe made with small brinjals. It is eaten as a side dish with main course. Dry masala stuffed in it then shellow fry them. Here I made it with mint tomatoes gravy.

Ingredients Serving: 4

  1. Small brinjals 7-8
  2. Salt 1 teaspoon
  3. Red chilly powder 1 teaspoon
  4. Corriander powder 1 spoon
  5. Turmeric powder 1 teaspoon
  6. Garam masala powder 1 teaspoon
  7. Dry mango powder 1 spoon
  8. Dry mint powder 1 spoon
  9. Oil for shellow frying half cup
  10. FOR CURRY :-
  11. one roughly chopped onion
  12. Garlic cloves 5-6
  13. Roughly chopped tomotoes two
  14. Mint leaves half cup
  15. Corriander leaves half cup
  16. Salt according to taste
  17. One teaspoon red chilly powder
  18. One teaspoon garam masala powder
  19. Oil 2 tablespoon

Instructions

  1. wash ,clean and dry the brinjals.
  2. Slit each brinjal lengthwise.
  3. Mix all dry spices in a bowl.
  4. Stuff this mixture into the split brinjals.
  5. Heat oil in a kadai.
  6. Add the brinjals gently.
  7. Softly stir them and cook on low flame for 10 to 15 minutes.
  8. Drain out in a plate.
  9. FOR CURRY:-
  10. Heat 2 tablespoon oil in a pan.
  11. Add onions ,ginger and garlic in it. Saute it till they become golden.
  12. Add tomatoes and green chillies in it and saute it for 5 minutes.
  13. switch off the flame .let the mixture cool down.
  14. Grind it with mint and coriander leaves in a smooth paste.
  15. Heat oil in a pan.
  16. Add paste in it and saute until 5oil separates.
  17. Add salt and dry spices in IT. mix properly.
  18. Now add fried brinjals in it. mix gently.
  19. Cook for 2 minutes. It's ready . Serve with naan or chapati
