Ingredients Serving: 4

  1. Raw mango diced - 2 cups
  2. Garlic cloves - 1 cup cleaned
  3. Mustard seeds - 1tsp
  4. Asafoetida- 1tsp
  5. Red chilli powder- 3 tbsp
  6. Turmeric powder - 1/2 tbsp
  7. Salt as per taste
  8. Vinegar - 2 tbsp
  9. Fenugreek seeds - 1 tsp
  10. Yellow mustard - 2 tsp
  11. Cumin - 2 tsp
  12. Black mustard seeds - 1 tsp
  13. Sesame seeds oil - 1/4th cup

Instructions

  1. In a clean pan on low flame dry roast fenugreek seeds, yellow mustard, cumin and black mustard seeds.
  2. Once done transfer into a bowl and let it cool completely, then grind into fine powder.
  3. Now in the same pan heat oil on medium flame.
  4. Add 1 tsp mustard seeds, once they start to crackle add garlic cloves. Saute and cook for 2 mins.
  5. Now add the diced mangoes, cook them for about 2 mins.
  6. When you see the oil is oozing out add in the dry spices. Chilli powder, turmeric, asafoetida, salt and grounded dry spice powder.
  7. Stir well and cook for a minute.
  8. After it cools completely add vinegar and mix well.
  9. Garlic mango pickle is ready, store this in a clean dry airtight container.
