Rajasthani kadhi is mainly prepared with sour curd or buttermilk mixed with chickpea flour and other dry spices. it is generally served with white rice or jeera rice.

Ingredients Serving: 4
For Kadhi we need
1 cup sour curd
1/4cup besan
1/2tsp haldi
1/2tsp red chilli powder
3 cup water
salt as per taste
For tempering we need
2 tbsp ghee/oil
1 tsp mustard seeds
1/2 tsp jeera
1/4tsp methi seeds
Pinch of hing
Curry leaves
2 dry red chillies
1/4 tsp turmeric powder
1/4 tsp red chilli powder
Instructions
firstly, in a large mixing bowl take 1 cup sour curd and ¼ cup besan
add ½ tsp turmeric and ½ tsp chilli powder
whisk smooth make sure there are no lumps.
add 3 cup water and whisk well.
Pour the besan mixture in a large kadai Or earthen pot and keep stiring until the mixture comes to boil keeping flame low. Else curd might curdle.
Once the kadhi comes to boil add salt and mix well
Continue to boil for 10-15 mins on medium flame stiring occasionally. If the consistency is thick adjust by adding water.
Prepare the tempering by heating the ghee in a pan, add mustard seeds, jeera, fenugreek seeds, hing, curry leaves, dry red chillies, turmeric powder, red chilli powder. Stir till the tempering splutters
Now pour the tempering over the kadhi.
Add chopped coriander.
Serve rajasthani kadhi hot with steamed rice or roti.
