Ingredients to make Ridge gourd peel Chutney

  • 1 cup : Ridge gourd peel (wash and pat dry)
  • 1 tbsp : chana dal
  • 1/2 tsp : cumin seeds
  • 3 to 4 nos : green chillies
  • Lime size : tamarind (clean by removing seeds and fibre)
  • 4 to 6 Sprigs : coriander leaves with stalks
  • 1/8 tsp : turmeric
  • salt to taste
  • water for grinding
  • 1 tbsp +1 tsp : oil
  • 1/4 tsp : mustard seeds
  • 1/4 tsp : cumin seeds
  • 1/2 tsp : urad dal
  • 1 broken : Dry red chilli

How to make Ridge gourd peel Chutney

  1. In a small sauce pan add 1 tsp of oil ,Once hot add chana dal , cumin seeds and fry them until golden .
  2. Later add the ridge peel , tamarind, green chillies and saute for couple of minutes .. Turn off the heat and cool it down to room temperature.
  3. In a small blender jar add the sauteed, along with turmeric , coriander and salt. Grind this to a thick yet smooth paste adding water as required.
  4. Make the tempering with rest of the ingredients i.e. cumin , mustard , urad and dry red chilli . Add the tempering to the chutney and serve !
  5. Lucious green looking Ridge peel chutney ready to hogg on with steamy rice ! Tastes spicy n flavorful ..something nutritious out of waste !
