ABOUT Ridge-gourd Peels Chutney RECIPE

Whenever i cook ridge gourd i do not throw the peel away. This spicy chutney has lot of fibre and nutritious value. It goes well with both rice and idli/dosa.

Ingredients Serving: 4

  1. Peels from 2 medium sized ridge gourds
  2. 4 red chilies, broken
  3. Urad dal 2 tablespoons
  4. Chana dal 2 tablespoons
  5. Tamarind 1 inch
  6. Grated coconut 1/2 cup
  7. Salt as per taste
  8. Gingelly oil 50 ml
  9. Jeera 1/4 tsp
  10. Pepper 1/4 tsp
  11. Asafoetida a pinch
  12. Curry leaves 7-8
  13. Mustard seeds 1/4 tsp for tempering

Instructions

  1. Chop peels into smaller pieces
  2. Heat 10 ml oil in a pan. Add urad and chana dal and saute until golden brown
  3. Add jeera and pepper. Stir well
  4. Add salt, chilies,ridge gourd peels ,tamarind and stir well
  5. Cook over low heat for 5 mins. Add coconut and stir well. Switch off
  6. Allow to cool completely
  7. Grind mixture to a smooth Chutney with very little water.
  8. Temper it with the remaining oil,mustard seeds,curry leaves and asafoetida
  9. Pour the seasoning over chutney and serve
