Ingredients Serving: 6

  1. Goat legs or trotters about 15 to 16
  2. Salt to taste
  3. Onions large fried 3
  4. Nihari masala readymade 1tbsp tied in a muslin cloth
  5. Bay leaves 4
  6. Whole masalas cinnamon sticks 5
  7. Cardamom pods 5
  8. Black pepper corns 10
  9. Green chillies slit 4 or 5
  10. Coriander and chilli powder 1 tbsp each lightly fried in 1 tbsp oil
  11. Coriander and mint about a handful
  12. Ginger garlic paste 1 tbsp
  13. Split bengal gram or dalia or putana dal roasted and powdered about 5tbsp
  14. Cornflour 3 tbsp


  1. Wash the trotters nicely and cook on low flame covered well adding all the masalas
  2. It usually takes 4 to 5 hours
  3. You can very well pressure cook that but slow cooking gives it a unique flavour.
  4. Add the cornflour and the dalia powder.
  5. Fry the onions and add after done.
  6. Add the fried chilli and coriander powders.
  7. Garnish with coriander and mint
  8. Serve it hot with naan.
