Ingredients to make Coconut Diamonds

  • 250 gms khoya (milk solids)
  • 150 gms desiccated coconut
  • 100 gms powdered sugar
  • 4-5 grounded cardamom (small green cardamom)

How to make Coconut Diamonds

  1. Roast khoya in the microwave for 30 seconds. Take out and roast again for 30 seconds.
  2. Roast desiccated coconut in microwave for 30 to 45 seconds.
  3. Mix both after roasting. Again roast for 30 seconds. Mix well. Add powdered sugar. Roast again for 30 seconds. Mix well. Make a smooth mixture. Add elachi powder.
  4. Grease a tray with ghee (clarified ghee). Spread mixture to set in a tray.
  5. Garnish with remaining desiccated coconut and cardamom powder.
  6. Refrigerate for a few hours. Cut in diamond shape pieces. Serve with hot tea.

My Tip:

For more setting, keep in the fridge overnight.
