ABOUT Mutton Pulav RECIPE

A very old and yummy mutton recipe made with rice.

Ingredients Serving: 6

  1. Mutton 1.5 kg
  2. Rice 1 kg
  3. Onion sliced 4 large
  4. Ginger 2.5 inches
  5. Garlic 6-8 pods (puri kali)
  6. Green chillies 10-15 or as per taste
  7. Mint leaves 9 - 10 leaves
  8. Whole spices: choti elaichi 6
  9. Badi elaichi 5
  10. Cardamom 4 pieces of 2 inches each
  11. Javitri 3 flowers
  12. Star anise 3 flowers
  13. Kali mirch 15 pieces
  14. Bay leaves 4
  15. Shahi jeera 1 tsp
  16. Jeera 1 tsp
  17. Curry leaves 10
  18. Curd 250 gms
  19. Tomatoes 3 large, finely chopped
  20. Garam masala powder 1 tsp
  21. Oil 5-6 tbsp

Instructions

  1. Clean and wash the mutton properly and pressure cook it with 1/4 of the onion, half of all the whole spices, little of the ginger garlic and green chilly paste plus salt.
  2. Cook it for 2 - 3 whistles then turn of the flame, do not remove the steam.
  3. In a heavy bottom pateli (handi) heat ghee and fry the potatoes.
  4. In the same ghee, add oil and all the remaining whole spices.
  5. Add in sliced onions and saute till translucent.
  6. Add ginger-garlic-green chilly paste, salt and garam masala powder. Cook for about 10 minutes on a medium flame.
  7. Add curd and tomatoes. Cook till the tomatoes are soft.
  8. Add in the boiled mutton and the fried potatoes. Mix well.
  9. To this add the washed rice and mix well.
  10. Add sufficient water to cook the rice and also add the chopped coriander leaves.
  11. When the water level reduces, lower the flame and cook on dum until the rice is done.
  12. Serve hot with curd raita.
