Ingredients Serving: 6

  1. 2 medium side beetroot
  2. 1 medium size cucumber
  3. 2 medium side carrots
  4. 2 medium hard boiled potato mashed
  5. Rice flour (just enough to bind it into a dough for cutlet)
  6. 2 small red onions finely chopped
  7. Salt and pepper to taste
  8. Lettuce leaves for garnish and making pockets


  1. Grind the carrots, cucumber & beetroot.
  2. Strain the juice. Use the juice as per your liking, it's very nutritious. We need the residue.
  3. Mix the residue, potatos, onions, salt and pepper. You will get a wet mixture.
  4. Now add 2-3 spoons rice flour. Mix. Add more and adjust till you get a soft dough like texture.
  5. Now make balls and flatten to form cutlet.
  6. Shallow fry 2 min each side. Use a slotted spoon to remove on a paper towel.
  7. Now take your serving plate. Scatter lettuce leaves and cutlet on the plate. Garnish with lemon wedges.
  8. Enjoy!!
