Bharva Tinda Masala

Ingredients to make Bharva Tinda Masala

  • 8-10 medium round gourds (tinda), peeled and slit
  • 1 teaspoon coriander powder
  • 1 teaspoon fennel powder (optional)
  • 1/4 teaspoon dried mango powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1/2 teaspoon garam masala powder
  • salt to taste
  • 2 tablespoon oil
  • 1 tsp ginger paste
  • 3 medium tomato, puree

How to make Bharva Tinda Masala

  1. Combine coriander powder, fennel powder, dried mango powder, turmeric powder, chilli powder, garam masala powder and salt in a bowl and mix well.
  2. Reserve some prepared masala and stuff the remaining masala into the gourds.
  3. Heat oil in a non-stick pan. Add ginger and tomato and cook till the oil separates.
  4. Reduce heat, add remaining masala and mix well. Add stuffed round gourds, mix, cover and cook for 1-2 minutes. Add some water, mix, cover and cook on low heat till gourds are fully done.
  5. Serve hot garnished with some Garam masala powder and chopped coriander.

My Tip:

I have used whole tinde for my recipe but they can be quartered and used in therecipe. Cooking time will vary as cut pieces will cook faster compared to the whole tinde.
