Ingredients to make Dhaba style Baingn Bharta

  • Big round brinjal 1
  • oil 2 tbsp
  • Green chilli 3 or 4
  • mustard seeds 1 tsp
  • garlic 1 spoon chopped
  • onion 1 chopped
  • tomato 1 big chopped
  • salt as per taste
  • turmeric powder 1 tsp
  • Red chilli powder 1 tsp
  • Garam masala powder 1/2 tsp
  • Pavbhaji masala powder 1 tsp
  • Crush coconut 1 tbsp
  • sugar 1 tsp
  • coriander leaves 1 tbsp chopped

How to make Dhaba style Baingn Bharta

  1. Make cuts on brinjal with a fork or knife. Apply little oil on whole brinjal and roast it on gas or tandoor or in a oven till done. Remove peel, mash well and keep aside.
  2. Hold green chilli with a fork and dry roast it on gas flame till skin removes. Do this process with all chillies. Chopped chillies and keep aside.
  3. Heat oil in a pan, add mustard seeds, when crackle put green roast chillies and garlic in it. Fry for 1 minute.
  4. Put onion and tomato, fry till done, add all spices and sugar in pan, fry till oil leaves.
  5. Now time to put mash baingn, salt and crush coconut. Mix properly, fry for 4 to 5 minutes on medium flame.
  6. Remove from flame, garnish with coriander leaves and serve hot with chapatis.
