Ingredients: 1 katori whole motth dal; 1 chopped onion; 3 tomatoes (pury); 2 tablespoon ghee; 1 teaspoon red chilli powder; 1 teaspoon coriander powder; 12 teaspoon cumin seeds; 1-12 teaspoon Khatta masala (amchoor + degi mirch +salt); 14 teaspoon fennel powder; 12 teaspoon garam masala; 1-2 glasses water; 1 katori boiled rice; 12 teaspoon turmeric; A pinch of kasoori methi; Salt to taste; Coriander for garnishing; For Kachori- 1 katori maida; 2 tablespoon melted ghee; 14 spoon ajwain; 1 tablespoon curd; A pinch of meetha soda; Lukewarm water for dough; Oil for frying

Ingredients Serving: 6

1 katori whole motth dal
1 chopped onion
3 tomatoes (pury)
2 tablespoon ghee
1 teaspoon red chilli powder
1 teaspoon coriander powder
12 teaspoon cumin seeds
1-12 teaspoon Khatta masala (amchoor + degi mirch +salt)
14 teaspoon fennel powder
12 teaspoon garam masala
1-2 glasses water
1 katori boiled rice
12 teaspoon turmeric
A pinch of kasoori methi
Salt to taste
Coriander for garnishing
For Kachori- 1 katori maida
2 tablespoon melted ghee
14 spoon ajwain
1 tablespoon curd
A pinch of meetha soda
Lukewarm water for dough
Oil for frying

Instructions

soak the mat beans in water for 5-6 hours. put the beans in a cooker.Add water and salt .
After 1-2 whistles cook it for 15 minutes in a low flame
Take ghee in a wok and add cumin seeds, fennel seed powder and coriander powder
Add onions once they become golden brown add tomato pury in it
Add red chilli powder and boiled motth dal in the wok
cook for 5-7 minutes on a low flame
Add garam masala powder,Khatta masala and kasoori methi
cook for 5 minutes Dal motth is ready
Take the boiled rice and separate it in two parts
one part of rice remain as it is .In the other portion, the rice is put in a wok
Add ghee in it and add some cumin seeds and turmeric powder so that the rice get a yellow colour.
For kachori-
In a bowl ,put Maida ,ghee or oil, ajwain and meetha soda
prepare a dough by using lukewarm water
leep it aside for half an hour covered with a muslin cloth
Heat oil and fry all the Kachoris on a low flame
Now , serve the mouth watering Motth chawal in layers with crispy kachori
First take a layer of white rice and sprinkle some khatta masala
Next comes the lal motth curry
Above the delicious curry are the yellow rice
Again put some lal motth curry followed by a layer of white rice.Sprinkle some khatta masala
Garnish the dish with onions and green chillies
serve with delicious kachoris and exotic Jaljeera
