ABOUT Cauliflower Manchurian RECIPE

Needless to say, this is everyone's first choice when it comes to chinese and vegetarian dishes. Find out how I made it with just a little twist to my liking.

Ingredients Serving: 3

  1. Cauliflower florets- medium sized - 1 and 1/2 cup
  2. Maida/Flour- 1 cup
  3. Corn flour - 4 tbsp
  4. Black pepper powder - 2 tsp
  5. Red Chilli Powder - 2 tsp
  6. Ginger - finely chopped - 2 tsp
  7. Garlic, finely chopped - 3 tsp
  8. Green chilli - 1, finely chopped
  9. Light soy sauce - 1 and 1/2 tsp
  10. Tomato sauce - 1 tsp
  11. Chilli garlic sauce - 1 tsp
  12. Spring onions - a handful
  13. Onions - 1, finely chopped
  14. Green capsicum- finely chopped - 3 tbsp
  15. Salt- to taste
  16. Sugar- 1 tsp
  17. Vinegar- 1 tsp
  18. Oil for Deep frying
  19. Channa masala powder - 1 tsp (optional)

Instructions

  1. Drop the cauliflower florets in boiling water (boil the water with a pinch of turmeric and salt). Leave it for 2 minutes. After a couple of minutes, transfer the florets to a bowl of cold water to stop the cauliflower from cooking further.
  2. In another bowl, mix together the maida/flour, corn flour, salt, 1/2 tsp pepper powder, 1/2 tsp red chilli powder. Add a little water to make a smooth batter.
  3. Dip the cauliflower florets in the batter and fry them until they are crisp and golden.
  4. Heat some oil in a pan and add in the chopped ginger, garlic and green chilli. Add the onions and capsicum next. Add a pinch of sugar to caramelize the onions a bit.
  5. Add the soy sauce, tomato sauce, chilli garlic sauce, vinegar, red chilli powder, pepper powder, salt and mix it well. (I add a little MTR's channa masala powder here, because I love how it tastes with the soy sauce and other ingredients. You may skip this if you wish to.)
  6. Add the fried cauliflower florets, give it a quick toss so the sauce is coated well.
  7. Remove it from the heat and serve it hot.

Tried it.excellent. Tip:you can reduce the quantity of maida and cornflour.that much is not required
