Ingredients to make Couscous Vegetable Salad

  • 1 cup couscous
  • 1 and 1/2 cup boiled water
  • 1 cucumber, peeled and chopped into small cubes
  • 1 tomato finely chopped
  • 1/4 cup spring onion finely chopped
  • 1 green chilli finely chopped
  • 1/4 cup cilantro finely chopped
  • 1/2 tbsp salt or as per taste
  • 1 tbsp lemon juice or as per taste
  • 1/2 tsp black pepper or as per taste
  • A pinch of red chilli powder
  • 1/2 tbsp extra virgin olive oil (optional)

How to make Couscous Vegetable Salad

  1. In a bowl, add in the couscous and boiling water. Mix it well, cover and keep it aside for 10-15 minutes. (You can boil the water in a microwave, it will only take 2 minutes.) Then allow it to cool for 5 minutes.
  2. In the mean time, you can prepare all the vegetables.
  3. Now take the couscous bowl. Pour in the oil and mix well. Then add in all the vegetables, salt, black pepper, red chilli powder and lemon juice. Mix it well together.
  4. Your 2 minute salad is ready! (If you want to eat a cold salad, then keep it in the fridge for 30-45 minutes)

My Tip:

You can use any choice of your vegetable. You can also add parsley. Adjust the spices and salt as per your taste.
