ABOUT Diet Soup RECIPE

During the winters, we all look for something to warm us up after a long and exhausting day at work. Nothing beats the winter chill like a steaming bowl of soup. Thus, presenting a soup recipe filled with good-for-you veggies. This soup recipe is full of benefits. It is rich in fibre, the fat and cholesterol content is very low and good for a healthy heart. I call this 'Diet Soup' as it has no cream, no cornflour and yes it contains veggies that aid weight loss. Let's move to the recipe.

Ingredients Serving: 4

  1. Lauki/ Bottle Gourd (chopped) 2 cups
  2. Onion (chopped) 1/4 cup
  3. Tomatoes (chopped) 1/2 cup
  4. Spinach (chopped) 1/4 cup
  5. Coriander (chopped) 1/4 cup
  6. Carrot (chopped) 1/4 cup
  7. Garlic cloves 2-3 (chopped)
  8. Salt 1 tsp
  9. Roasted cumin seeds powder 1/2 tsp
  10. Black pepper powder 1/2 tsp
  11. Water 2 and 1/2 cups

Instructions

  1. In a pressure cooker, add all the veggies along with water, salt, cumin powder and pepper.
  2. Simmer and cook for 30 minutes.
  3. With the help of a blender, blend all the cooked veggies smoothly.
  4. Garnish with coriander leaves and serve it hot.
