Rice spiced with fresh green flavours with a great combination of healthy coconut sauce.

Ingredients Serving: 4

  1. For the green curry paste:
  2. Chopped lemon grass stalk 2 tbsp
  3. Dhaniya/ coriander 1 cup
  4. Chopped onions 1/4 cup
  5. garlic 1 tbsp
  6. Green chillies 7-8
  7. ginger 1 tsp
  8. lemon juice 1/2 tsp
  9. lemon zest 1/4 tsp
  10. Dhaniya powder 1 tbsp
  11. Jeera/ cumin seeds 1 tbsp
  12. Kali mirch/ Black pepper 1/4 tsp
  13. For the rice:
  14. Beans (blanched) 1/4 cup
  15. Boiled green peas 1/2 cup
  16. Broccoli 1/4 cup
  17. Steamed rice 4 cups
  18. Green paste 1/2 cup
  19. coconut milk powder 1/4 cup
  20. salt to taste
  21. oil 2 tbsp
  22. For the coconut sauce:
  23. coconut milk 1/2 cup
  24. oil 1 tbsp
  25. jeera 1/2 tsp
  26. Spring onions white 1/4 cup
  27. Green chillies 2
  28. Green curry paste 1 tbsp
  29. lemon juice 1 tsp
  30. Spring onions greens 1 tbsp

Instructions

  1. Put all of the ingredients of the green curry paste in a mixer and make a fine paste of it. The green curry paste is ready.
  2. For the rice, heat oil in a pan, let it become hot then add in the veggies. Saute for some time then add in the green curry paste, coconut milk powder and cook for a while. Add rice to it and mix it well.
  3. Garnish it with spring onions on top.
  4. For the coconut sauce, take oil in a pan, add in the jeera and let it it crackle. Then add in the spring onions white part and saute well.
  5. Add in the green chilli and salt, then add in the coconut milk, green paste and cook for a few seconds. Next add in the lemon juice, spring onions green part and cook till it's ready.
  6. Serve it with the hot green rice.
