Ingredients Serving: 3
Roasted vermicelli 1 cup
Onion (medium sized) 1
Ginger garlic paste 1 tbsp
Green chilis (finely chopped) 1
Tomato (diced) 1
Carrot (finely chopped) 1/4 cup
Beans (finely chopped) 1/4 cup
Mushroom/ Cooked chicken (thinly sliced) 1/4 cup
Turmeric powder 1/4 tsp
Red chili powder 3/4 tsp
Salt as required
Ghee 2 Tbsp
oil 2 tbsp
Cashew nuts 2 tbsp
Raisins 2 tbsp
Corriander leaves (chopped) 2 tbsp
Water 2 cups
Instructions
Take a pan and heat it. Add ghee and oil to it. I have reduced the amount of ghee to half taking into account the health aspects. If you want, you may use ghee alone.
Once the mixture gets heated, fry cashew and raisins until they become golden brown. Once done, take them off the pan and keep them aside.
To the same oil, add the veggies carrot, beans and mushroom. Saute and cook covered for 8-10 minutes, stirring in between. Once cooked, keep theem aside.
Now add finely sliced onions. Saut until it turns soft and light pink.
Now add ginger garlic paste and green chillies and saut again.
Once the raw smell goes off, add in the chopped tomatoes. Keep sauting until the tomatoes become tender.
Reduce flame and add turmeric powder and red chilli powder. Mix well.
After sauting for 2 minutes, add 2 cups of water and salt. After mixing, cover the pan with a lid. Increase the flame. Wait until the water boils.
Once the water starts boiling, reduce flame and add in the roasted vermicelli. (If the vermicelli that you have is not roasted, you may roast it for 5-6 minutes until it turns golden brown, before adding to the boiling water. Ensure that you do not burn it.)
Once you add the vermicelli to the boiling water, increase the flame to medium and cook for 8-10 minutes with lid on, until the vermicelli gets cooked completely.
When it is almost done, add in the veggies, chopped coriander leaves, fried cashew nuts and raisins. Give a thorough mix, and cook for 1-2 minutes.
Now your delicious vermicelli upma is ready to be packed.
