ABOUT Fusion Madras Mushroom Fritatta with Mango Thoku. RECIPE

A fusion of Italy and indian cusine resulting in, what I call is "An Indian egg pizza"!.

Ingredients Serving: 4

  1. 12 - eggs
  2. 3 tbsp - curry leaves
  3. 1 tbsp - black mustard seeds
  4. 1/4 cup - grated Mozzarella cheese
  5. 1/4 cup - cheddar cheese
  6. 1/4 cup - chopped onions
  7. 1/2 cup - sliced mushrooms
  8. 2 tbsp - coconut oil
  9. Salt pepper & red chili flakes as per taste
  10. mango thoku pickle or 'aam ka bareek achar'

Instructions

  1. Whisk the eggs using an electric beater until light and fluffy.
  2. Add in the chili powder, salt and pepper and whisk again for about a 1 minute.
  3. Heat oil in a pan, add in the onions and mushrooms. Add in the eggs once the onion turns translucent.
  4. Simmer and cook on low flame for another 1 minute.
  5. Prepare the tempering by adding curry leaves and mustard seeds to oil. Heat for a minute.
  6. Top the Frittata with cheese and the add the tempering. Continue to cook for another 1 minute. Serve with mango pickle.
