Ingredients Serving: 6

  1. Maida 1 cup
  2. Wheat flour 1/4 cup
  3. lemon juice 1 tablespoon
  4. Salt
  5. Ghee 2 tablespoon
  6. Oil 2 tablespoon
  7. Ratlami sev 200 gram
  8. Salt
  9. Sugar powder 2 tablespoon
  10. Red chilli powder one teaspoon
  11. Turmeric one teaspoon
  12. Amchoor powder one teaspoon
  13. Chat masala 1 Teaspoon
  14. Dhania jeera powder one teaspoon
  15. oil to fry
  16. green chutney
  17. Khajur Imli chutney
  18. Finely chopped boil potatoes
  19. Coriander

Instructions

  1. In a plate mix Maida and wheat flour. Add salt. Make a well in the center.
  2. Heat 2 tablespoons of oil and 2 tablespoons of ghee. Add in the center . Mix oil and ghee in the flour with a spoon.
  3. Now add lemon juice in the flour and with the help of chilled water make a soft dough. Cover the dough with a wet cloth for half an hour.
  4. Grind ratlami sev in the mixer and make a fine powder. Mix all the spices like red chilli powder, salt, sugar powder, turmeric, amchoor powder, Dhanya jeera powder and chat masala in ratlami sev mixture.
  5. Mix it properly. The mixture should be in a fine powder form.
  6. Divide the dough into 16 equal parts. Roll out each portion of the dough into a small Puri shape.
  7. Place one 1tbsp sev mixture in the centre. Bring together all the sides and seal it tightly. Roll the filled portion like a poori, ensuring that the filling does not spill out and like this make all kachori
  8. Heat the oil in a deep kadhai on medium flame and deep fry 3 Kachori at a time on a slow flame turning them in between till they turn golden brown. Drain the excess oil on absorbing paper.
  9. Place 3 kachories on a serving plate and make a hole in the centre of each kachori. Put finely chopped boiled potatoes, green chutney, Khajur Imli chutney evenly and sprinkle coriander and sev on it
  10. Serve ad enjoy.
