Patnam Pakoda

Ingredients to make Patnam Pakoda

  • 1/2 cup gram flour
  • 1/4 cup rice flour
  • 1 tbsp ghee
  • 2 medium sized onions
  • 2 spring curry leaves finely chopped
  • Handful coriander leaves finely chopped
  • 1/2 tsp ginger finely chopped
  • 8-10 cashew nuts soaked
  • 1 tsp red chilly powder
  • salt to taste
  • 1/2 tsp baking soda
  • oil for frying
  • 100 gm paneer
  • For marination -
  • 1 tsp red chilly powder
  • 1 tsp mango powder
  • 1 tsp cumin powder
  • 1 tsp ghee or butter
  • salt 1 pinch

How to make Patnam Pakoda

  1. First cut the onion into thin strips and sprinkle 1 tsp salt on it and keep aside for 5 minutes
  2. Meanwhile, take gram flour in a bowl, add rice flour and ghee and mix well
  3. Now add red chilly powder and bak8ng soda and mix
  4. Now add finely chopped curry leaves ,coriander leaves and ginger
  5. Add soaked chesew nuts and Give it a good mix
  6. Now add onions
  7. Onions will leave water that is sufficient to bind the mixture so no need to add water in it if required add 1 or 2 tsp water
  8. Heat oil in a pan
  9. Make balls from the mixture and flatten a bit
  10. Deep fry it till golden brown on medium heat
  11. Meantime in a plate take spices of marination and mix well
  12. Cut the paneer into square shape equal to pakoda size
  13. Coat the paneer with dry spices
  14. On a griddle, heat ghee or butter
  15. Shallow fry the coated paneer till golden crisp on medium heat
  16. Now cut the pakoda into two halves
  17. Place the paneer piece in between
  18. Serve hot with sauce or chutney

My Tip:

Cashew nuts must be soaked otherwise when we fry pakodas it will get burnt and taste bitter. Salt has been added to onions so no need to add salt again.
