Black Pepper Chicken

Ingredients to make Black Pepper Chicken

  • FOR THE pepper MASALA :-
  • 1 tbsp black peppercorns
  • 1/4th tsp cardamom seeds
  • 1/4th tsp whole cloves
  • 1/4th tsp ground cinnamon
  • FOR THE chicken :-
  • 2 tsp grated root ginger
  • 3 garlic cloves ; crushed
  • 1/4th tsp turmeric
  • 2 tbsp cider vinegar
  • salt
  • 1000 gm chicken bone in
  • 4 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 2 bay leaves
  • A cinnamon stick
  • 4 cloves
  • 4 green cardamom pods
  • 3 onions ; finely sliced
  • 1 tsp black peppercorns
  • 1 tomato ; finely chopped
  • 2 tbsp chopped coriander leaves
  • 2 green chillies ; slit
  • Fresh cream as desired

How to make Black Pepper Chicken

  1. Make the pepper masala with the ginger , garlic , turmeric , vinegar and salt to taste in a bowl and add the chicken .
  2. Cover and leave to marinate in fridge for two hours .
  3. Heat the oil in a deep pan over medium heat .
  4. Add the cumin seeds , and as soon as they crackle , add the bay leaves cinnamon , cloves , cardamom pods and peppercorns . Add the onions and fry until golden brown. Now add the tomato and continue to cook until thoroughly incorporated into the onion mixture .
  5. Add the marinated chicken and saute for a few minutes to allow the natural juices of the chicken to evaporate . Add just enough water - about 150 ml - to cook the chicken.
  6. Bring to a boil , reduce the heat and braise for about 15 mins uncovered .
  7. When almost cooked , adjust the seasoning with salt and add the coriander .
  8. Finally , add some cream if desired and serve .
