ABOUT Egg and Sprout kothu Parotta. RECIPE

Kothu Parotta is very famous in South especially in Tamilnadu district. A bite sized Chopped paratha are seasoned with Onion Tomato and masala and enhanced with Chicken , Eggs , Chiili etc. Hete I have added Sprouts with Egg Omlet to try something different.

Ingredients Serving: 2

  1. Parottas 4 no.
  2. Eggs 4
  3. Sprouts of your choice 1 katori
  4. Onion 2 (big)
  5. tomatoes 2
  6. Green chilli 2
  7. coriander powder 1 tsp
  8. Red chilli powder 1 tsp ( to taste )
  9. Garam masaala to taste
  10. Salt to taste
  11. Chat masala 1 tsp
  12. oil 2 tbsp
  13. Asafoetida 1/4 Tsp
  14. Mustard seeds 1tsp
  15. Zeera 1/2 tsp
  16. Garlic crushed 1 tsp
  17. Ginger grated 1/2 tsp
  18. Sesame seeds 1 tsp
  19. Curry patta few
  20. Lime juice of 1/2 lemon
  21. Salt to taste
  22. Onion for Omlet 1
  23. Salt and chilli for Omlet to taste
  24. Butter 1 tsp ( for omlets).

Instructions

  1. Saute sprouts in a pan by adding 1 tsp oil. After it gets cooked transfer on a nonstick tawa and saute on medium flame
  2. Saute till it becomes crisp. Transfer in a plate and keep aside.
  3. Till that heat rest oil. In a kadhai. Add Asafoetida and Mustard Seeds. After it crackles add finely chopped onions. Saute and add all masala one by one.( except chat masala ).
  4. After it is sauted well add finely chopped Tomatoes and saute well.
  5. Prepare Omlets (2) by adding chopped onion salt and chilli.
  6. Make bite sized pieces of parottas.
  7. Your Onion Tomato mixture is ready till now. Add paratha and mix well.
  8. Adjust salt and masala. Cut Omlet in small bites and add. Mix well and add lime juice to the mixture
  9. Saute for few minutes and now add crispy Sprouts. Add Chat masala Turn the gas off.
  10. Garnish with coriander leaves And serve with onion raita/ tomato chutney / seasonal butter milk./ Zeera Chaash.
  11. I prefer zeera Chaash with it.
