ABOUT Khubani Ka Meetha RECIPE

Khubani Ka Meetha or Qubani ka Meetha is a traditional Hyderabadi sweet delicacy made from dried apricots. Khubani is an urdu term for apricots. So khubani ka meetha means apricot halwa or sweet made from apricots. This is a very easy-to-make dessert.

Ingredients Serving: 4

  1. 18-20 dried apricots/khubani
  2. 1-1 1/2 cups water
  3. 1 teaspoon sugar
  4. For the custard -
  5. 1 cup milk (or 250 ml milk)
  6. 1 1/2 tablespoon custard powder
  7. 1 1/2 tablespoon sugar
  8. For garnishing -
  9. sliced or chopped almonds

Instructions

  1. For the Khubani -
  2. Rinse the apricots well.
  3. Soak apricots in 1 1/2 cups water overnight.
  4. Next day, remove the apricots from water and squeeze out water from them. Deseed and roughly chop them.
  5. Break the hard covering to take out the almonds from inside. Finely chop the almonds and keep them aside, they will be used for garnishing.
  6. Reserve the water in which apricots were soaked.
  7. Now, in a deep non-stick pan, combine chopped apricots and 1 cup reserved water. Cook on a low to medium flame for about 15-20 minutes.
  8. Once you observe that they have started becoming soft, mash them using vegetable masher. If you feel that the mixture has become too dry, you can add more water.
  9. Now add 1 teaspoon sugar and mix well. Cook for another 4-5 minutes. Remove from the fire and set aside.
  10. For the Custard -
  11. In a thick bottomed pan, heat milk.
  12. Once the milk becomes warm, take about ¼ cup milk in a bowl. Add custard powder in it and mix well. Make sure there are no lumps in the mixture.
  13. Once the milk comes to a boil, add sugar in it. Keep on stirring continuously.
  14. Once the sugar dissolves, add milk-custard mixture and cook on a medium flame for 8-10 minutes or till the custard thickens, while stirring continuously.
  15. Remove from flame and set aside.
  16. In a serving bowl/glass, put a portion of the prepared custard, top it with a portion of the khubani and finally top it with chopped almonds.
  17. Repeat the same procedure to make more servings.
  18. Serve

I'm a Hyderabadi dear and this is not the traditional or authentic way to prepare this sweet . I think you've mistaken it for something else .
